  • 466.68 g Large shrimp
  • 40 g Flour
  • 43.32 g Cornflour
  • 1.36 tsp Vegetable oil
  • 100 g Grated coconut
  • 666.68 cl Oil
  • 106.68 g Orange
  • 2.68 tsp Dijon mustard
  • 2.68 tsp Honey
  • Tabasco
  • Salt
  • Pepper

1.  Peel, remove the vein and wash shrimp. Dry well on paper towels.
2.  Combine flour, cornstarch, salt and white pepper. Add 2 tablespoons of vegetable oil and ice water. Mix well .
3.  Pour the coconut in a shallow dish. Put the shrimp one by one in the batter and then roll in coconut. Once coated, put the shrimp in a pan with oil to 175 º C. Fry the shrimp 4 minutes in boiling oil until browned .
4.  Then cook fried shrimp 5 minutes in the preheated oven at 150 º C (gas mark 5).
5.  To make the dip : combine jam, mustard, honey and hot sauce in a small bowl. Mix well. Serve the shrimp and sauce to dip next .
