Ingredients for

  • 1.2kg Chicken Breast, Diced
  • 1kg Tomatoes
  • 250g Red, Yellow or Green Peppers
  • 3 Onions
  • 3 cloves Garlic
  • 40g Butter or 3 Tbsp Vegetable Oil
  • Salt and Pepper, to taste
Preparation

1. Blanch tomatoes in boiling water for 30 seconds, then peel and dice them.

2. Remove seeds from peppers, and chop them with onions.

3. Melt butter or oil in a large frying pan, add chicken and cook until golden  brown. Add onions, tomatoes, peppers, crushed garlic, salt and pepper.

4. Half cover with a lid and simmer for 45 to 50 minutes.


TIP: 20 minutes before serving, cook the rice. Place rice in a hot serving dish, and cover with the chicken. Can also be served with chili peppers on the side.
